The entire population went extinct between 1300-1400 AD as the islands began to be settled by polynesian ancestors of the Maori. Since moas evolved in New Zealand where there were no land mammals, they basically had no predators (with one very notable exception) and probably didn’t have any survival instincts either. Maori likely could have just walked up and hit them over the head with rocks.
